Ingredients:
For Caramel:
• 1 cup sugar
• 6 tablespoons water
For Pudding:
• 5 eggs
• 2 tablespoons of cornstarch
• 1 cup whole milk
• 1 teaspoon vanilla powder
• 3 tablespoons of sugar
Instructions:
1. Make the Caramel:
• In a small saucepan, combine sugar and water.
• Heat over medium heat, stirring occasionally, until the sugar dissolves and begins to caramelize (turn golden brown). Be careful not to burn it.
• Once the caramel reaches a rich amber color, pour it immediately into the bottom of each cup or ramekin. Swirl the cups to coat the bottom evenly with caramel. Set aside to cool.
2. Prepare the Pudding Mixture and cornstarch mixture
• in a bowl mix cornstarch and vanilla powder then put on heat to get creamy
• In a bowl, whisk together the whole milk, vanilla powder and a prepared cornstarch mixture until well combined.
• Pour the mixture into the caramel-lined cups or ramekins, filling them up to about ¾ full.
3. Bake the Pudding:
• Preheat your oven to 325°F (170C).
• Place the cups into a baking dish and add hot water to the dish, about halfway up the sides of the cups (this is called a water bath or bain-marie).
• Bake for 20 minutes or until the pudding is set (a knife inserted in the center should come out clean).
4. Cool and Serve:
• Let the puddings cool to room temperature, then refrigerate for at least 2 hours or overnight.
• To serve, run a knife around the edge of each cup, then carefully invert onto a plate. The caramel will flow over the pudding.
