A very simple dish. Tomatoes cooked how they like to eat them in province. It’s very simple but very delicious. What’s amazing is you roast them in olive oil. Let’s make some smoke. In the perfect world, you’d buy your cherry toms on the vine. But the truth is we don’t live in the perfect world full of sulch. You want them to burst because by bursting they release their juice that reduces down. The combination of the olive oil emulsifying with the tomato juice is extraordinary. And then the pectine bring it all together. It’s like the most delicious syrup in the world. Spring of time bay leaf. Once again, no skill required. Bang. garlic, which is dictated by your pallet. As you can see, they’re starting to break down and burst. It started to wilt, started to explode. They’re ready. And there we have it. Roast cherry tomatoes on an intense heat with garlic, thyme, and bay leaf. Little crystal salt, olive oil. Serve warm with fish or cold on toast with tapinat.
