This is my best way to use the extra space on the smoker.
Coat with melted butter, then season with salt, pepper, garlic powder, and onion powder. Cook wrapped for the first 1.5 to 2 hours at 250. After that, unwrap and finish cooking. Brush on more melted butter a few minutes before removing them from the smoker. Then, serve with bacon and cheese.

Just remember, small potatoes make the steak look bigger
i think there is a requirement to wear black gloves when squeezing smoked food. get with the program! (but looks delicious)

I do that all the time! The best thing about is that I can toss these potatoes on the smoker alongside whatever else I am cooking. Meat and potatoes are the ultimate duo.
How long you smoking for after unwrapping? 10/10 will be trying this.
