Chicken Marinade & Cooking
• 2 onions, sliced into long strips
• 12 skinless chicken drumsticks
• 3 tablespoons minced garlic
• 2 teaspoons paprika

Today we’re preparing tender marinated skinless chicken drumsticks paired with a zesty spiced vegetable salad. Perfect for a quick flavorful meal. Let’s dive in and create a meal that’s satisfying to make as it is to eat. Start by slicing two onions into long strips. Let’s start by marinating the chicken using a plate to cut through the skin. At the joint, gently pull back the skin. Rinse under cold water and then pat them dry. This helps the marinade penetrate fully. In a large bowl, we’re going to add the onions and the drumsticks. Three tablespoon of minced garlic. 2 tablebspoon of paprika. We’re going to mix the chicken. Adding the spices little by little helps everything get coated evenly. And you can adjust seasoning as you go. Next, we’re going to sprinkle in one tbsp of ground cumin. Mix. Then half a tablespoon of ground ginger. and mix again. One tablespoon of ground coriander Half a tablespoon of ground ginger. Now add 1 tbsp of mild Add pepper sauce. Mix to combine. Finally, toss in one preserved lemon. Squeeze out the juice. Then mix again. Cover and refrigerate overnight for deep flavor. If you’re tight on tight, you can marinate it for at least 2 hours at room temperature or 4 hours in the refrigerator. Add 1 tbsp of olive oil to a large pot. Place the drumsticks into the cold pot. Then turn Turn heat to medium high. That cold start sear draws out fat and crisps the outside. Sear the chicken until it browns. Flip every few minutes until golden all around for about 10 minutes total. Then we’re going to remove the chicken to a plate and set it aside. [Music] Now we’re going to add one orange slice into the hot pot. Sear for about 1 minute per side. until caramelized. Then we’re going to remove it and set it aside. Back to the pot. We’re going to toss in those onion strips, breaking up the brown bits, which adds deep flavor. Cook onions until translucent for about 4 minutes. Then we’re going to pour in two cups of beef broth. Bring to a simmer. Then turn heat to low. Cover and cook for 25 minutes or till the internal temperature reads 165° F. and two cups of chicken broth. Just enough to cover the drumsticks. The beef adds richness and the chicken provides depth. While that simmers, we’re going to build our salad. Peel and cut into squares two cucumbers, one red bell pepper, and one orange bell pepper and add it into a bowl. Toss in 2 tbsp of olive oil, 1 tbsp of cumin, 1 tbsp of paprika, half a tablespoon of garlic powder, salt, black pepper, and juice of one lemon. And we’re going to mix this together. In a small pan, heat 1 tbsp of olive oil. Then we’re going to add the salad mix and sauté for 3 to four minutes until the veggies soften and the edges begin to caramelize. Look for slight browning but still crispy. Now you’re ready to enjoy a delicious balanced meal with both satisfying and refreshing. Thank you for joining me today.
