These kind of meals are on repeat at my house. I’m not reinventing the wheel. I just want to show you some beautiful food. Grilled and marinated vegetables are so good, especially in the summer with my favorite veggies. And they go well with any meal, whether it be a steak, chicken, making sandwiches, you name it. And when I was growing up, my mom always grilled carrots. So, I decided to add those in, too. Oil your grill so nothing sticks. And you’re just going to grill all of those veggies until they have nice char marks. If you’ve never tried grilled scallions, try them. They’re so delicious. Salt and pepper, olive oil, little balsamic vinegar. Perfect. Now, I’m going to mince up some garlic for the vegetables, some basil, or you could do parsley or oregano, whatever you like. This is kind of like whatever suits your taste. I’m going to season everything separately because I just like to do that. You can throw everything in the bowl and toss it around. Very simple. Salt, pepper, fresh garlic, basil, red wine vinegar, lots of olive oil. And you’re going to repeat that step with everything except for the scallions. And this mix of vegetable makes the best sandwich the next day with a piece of fresh mozzarella. Out of this world. Like I said, scallions, salt, pepper, olive oil, little drizzle of balsamic. You’re done. Now, I’m going to add a little bit of fresh mozzarella. Just tucked in there here and there. So delicious. And there you have it. Like and follow for more.
