I think swap the bacon for some proscutto or something a bit more cured than and some seasoning and it could be good.
The avo is a bit weird, I’ve never had a cooked avo before. I think an unripe cooked avo would be different than how we are used to them now. Any one tried a cooked unripe avo? can’t be too different in texture than the pear nd tey both would be sweet.

Reminds me somehow of the Czech “španělský ptáček”, AKA spanish bird. A weird name for meat rolled around pickles, hard-boiled eggs, meatloaf and fatback. Sear the meat, roll it, oven bake it. Sounds odd, looks odd, tastes absofuckinglutely fantastic.
