Craving a crispy, savory pastry that’s packed with flavor? Try this traditional Turkish Spinach Börek recipe made with flaky phyllo dough!
Perfect for breakfast, brunch, or a light dinner – vegetarian, simple, and absolutely delicious. 😋
Ingredients:
For the Börek:
• 3 sheets of phyllo dough (yufka)
For the sauce:
• 6–7 tablespoons yogurt
• 1/2 cup melted butter (or margarine)
• 1 egg
For the filling:
• 1 kg spinach
• 1 onion (chopped)
• 1 tablespoon tomato paste
• Salt, black pepper, red pepper flakes
• Vegetable oil
Instructions:
• Prepare the spinach filling:
Clean and rinse the spinach. Lightly blanch it in hot water, then drain.
In a pan, sauté the chopped onion in vegetable oil until golden.
Add tomato paste, salt, and spices. Then add the spinach and cook for a few more minutes. Set aside.
• Make the sauce:
In a bowl, whisk together yogurt, melted butter, and 1 egg until smooth.
• Assemble the börek:
Cut each phyllo sheet into 4 pieces (triangles or strips).
Brush each with sauce, add some filling, and roll into a cigar or spiral shape.
Place on a baking sheet with parchment paper.
• Bake:
Brush the tops with beaten egg and sprinkle with sesame or nigella seeds.
Bake at 180°C / 350°F until golden brown and crispy.
Crispy on the outside, soft on the inside – these spinach böreks are irresistible!
