Post-gym cobb salad today!

The base is romain lettuce, red cabbage, cucumber, tomato, red onion tossed in olive oil and red wine vinegar.

Toppings: leftover rotisserie chicken, roasted chickpeas (still soft), smoked almonds, avocado, blue cheese, boiled egg.

I make the almonds by smashing them in a mortar & pestil, and roasting in oil, tamari and liquid smoke.

Served on a fancy serving board my wife got me for our anniversary (wood) last year!

    This is one of my favorite salads and when I make it for my family I wrap it in a tortilla for my kids and call it a Cobb Salad Burrito.
