    It should sink back into the batter in 15-30 sec. It looks like it’s sitting on top. IMO it’s too thick, and needs a few more folds.

    Under macaronaged. It needs a few more folds. The batter shouldn’t break up like that when it falls off the spatula. It should be smooth and consistent and you should be able to get a complete figure 8 motion out of it into the bowl without it breaking. It’ll look a bit like silky ribbon. Then watch the 8 or the ribbon melt back into the bowl and it should take like 15 seconds. You were close, though.

    for me i think it’s a little overmixed. yes, the batter breaks up, but it quickly drops again and the batter drop is already quite thin.
