Although I LOVE ramen and Japan, palate fatigue is a real thing because Japanese ramen (in general) doesn’t have a variety of flavors like say, Vietnamese noodle soups.
My second week in Japan I managed to find some fresh Thai peppers at a local grocery and have been adding them to various ramens in Japan. Adding them to Tonkotsu was a game changer. It gave the ramen a brightness and spiciness that cut through the heavy broth. Even my Japanese business partners agreed it made the ramen better 😂

Chili crisp mixed it. Cracked black sesame seeds sprinkled on top, plus a tiny pile of shredded nori and purple dulse in the center. Cut that egg and display the halves yolk up. Make it a feast for the eyes too.
