Zucchini Carpaccio recipe. Perfect summer salad
Ingredients:
1 Lemon, large (zest and lemon juice)
3 Zucchini, medium
1/4 cup Olive oil
Salt and pepper to taste
Parmesan cheese grated
Recipe:
Slice zucchini using a vegetable peeler, drizzle with olive oil, lemon juice, sprinkle lemon zest, salt, pepper and grate some parmesan on top, mix and serve. Enjoy!

Looks delicious, but can I bake it? I am no longer able to eat raw vegetables.
