I firmly believe that I am not the only person who’s shown up to the airport hungry, spent $50 on a burrito, and left 17 vegetables behind to rot in the fridge. But I’m proud to report that I’m older and slightly wiser now. Before leaving to visit my parents last week, I pulled together this like fridge cleanout green bowl, and it accidentally turned into one of the best meals I’ve made in a while. The grilled halumi gets marinated in lime, chilies, and pickled shallot, and it only gets better the longer it sits. I tossed it with fresh herbs, crunchy veg, chewy grains, and a drizzle of yogurt sauce, and it travels well, but it also holds up in the fridge for days. It’s just as good on the plane, in a deli container, or eaten standing at the counter with a spoon.

This looks amazing !
Hey where can we get your recipes?
I love prepping freezer meals before a trip. Uses up whats in the fridge so nothing goes bad and leaves you with quick, yummy, homemade food when you get back and just dont want to cook
I need a recipe this looks like something way out my comfort zone and I want to try it!
Genuine question, how do you take this on a plane? Don’t they take everything above a quart size bag of liquid? This seems to have a lot of liquid or things that TSA would make you throw out before going through security
The best meals come together where u in a rush
