✨ Peanut Butter Frosting
– 3 egg whites
– 100g peanut butter
– 200g sugar
– 150g butter (room temp)
– Pinch of cream of tartar
Melt the sugar until it reaches 71°C. Whisk egg whites and cream of tartar until soft peaks form. Slowly pour in the melted sugar while whisking on high. Add butter 1 tbsp at a time, then peanut butter. Whisk until smooth and glossy.
🧁 Cupcakes
– 80g butter (room temp)
– ¾ cup sugar
– 1 cup self-raising flour
– ¼ tsp bicarbonate of soda
– Pinch of salt
– 2 large eggs
– ¼ cup oil
– ¼ cup buttermilk
– 1 tsp vanilla extract
Whisk butter and sugar until pale and fluffy. Add eggs, then mix in wet ingredients. Fold in the dry ingredients. Bake at 180°C for 20 minutes.
