Got some zucchini in last week’s farm share and some corn from our neighbor and fritters were calling my name. Love that these are baked, not fried. The recipe recommends chickpea flour rather than all-purpose, there are a couple of eggs and a small amount of grated Parmesan so I’d say they fall within the MD guidelines. I made a dipping sauce with plain yogurt and some Frank’s. 10/10
