Grilled Turkey & Veggie Salad with Balsamic-Peanut Dressing
Bring vibrant Mediterranean flavors to your table with this grilled turkey and roasted vegetable salad, finished with a rich balsamic-peanut dressing. A perfect balance of smoky, sweet, and savory in every bite!

Ingredients:

Small turkey fillet – 1 piece
Zucchini – 1 piece
Eggplant – 1 piece
Bell pepper – 2 pieces
Red onion – 1 piece
Basil – 10-15 leaves
Roasted peanuts – 1 handful
Olive oil
Salt
Black pepper

For the dressing:
Peanut oil – 3 ½ fl oz (50 ml)
Balsamic sauce – 4–5 tbsp
Salt and black pepper – to taste

Preparation:
Prep the Veggies & Turkey:
Slice zucchini and eggplant into ½-inch (1 cm) thick rings. Cut bell peppers into large pieces and the onion into cubes. Lightly salt the veggies.

Grill to Perfection:
Drizzle olive oil on the vegetables and grill until tender—zucchini and peppers should be al dente, eggplant fully cooked. Season turkey fillet with salt and pepper, brush with olive oil, and grill until golden and cooked through. Cover with foil to rest.

Make the Dressing:
In a bowl, mix peanut oil, Balsamic sauce, salt, and pepper.

Assemble the Salad:
Slice the turkey and grilled vegetables into strips. Finely chop basil and peanuts. Combine everything in a bowl, drizzle with dressing, and toss well.

Serve:
Plate the salad, sprinkle with extra basil and peanuts for crunch, and enjoy a healthy, flavorful dish!
