Newbie here, just got a sousvide! I have smoked 800g of salmon and freeze it sousvide. I'm wondering can I take the frozen pack and place it in a sousvide and if so, how long?

    It’s already cooked so why would you need to sous vide it? Isn’t it normally eaten cold?

    Was it hot or cold smoked? If it was cold smoked did you cure it first?

    If it was hot smoked, it’s ready to eat.
    If it was cold smoked after (proper) curing, it’s ready to eat.

    Sure… Not sure how you smoked it but if you hot smoked it then it is already cooked. If you cold smoked it then you probably want to get it to about 112-118, will take a bit longer as it is frozen — or you could thaw it in the refrigerator, which is the best way to thaw fish
