




First time trying a reverse sear. Pulled them out a tad late at ~135 but very happy with the end results. Finished in my cast iron with kerrygold butter, fresh rosemary, shallots, and crushed garlic. Honest opinions, criticism, and helpful suggestion are welcome!

I prep my meat with salt and let it sit in the fridge for 24 hours, then I do all the steps you did. Besides that fancy butter
