this is one of my favorite casserles It’s made with zucchini and potato and it is so good We’re going to be doing a lot of slicing in this recipe So if you have a mandolin go ahead and grab that because it’ll save you a lot of time Same with the chopper If you have one use it If you don’t that’s okay Just dice a red bell pepper and a red onion And then add those to the big bowl with potatoes and zucchini Insert press some garlic into the bowl If you don’t have fresh garlic you can also use garlic granules or garlic powder Add your choice of oil along with some nutritional yeast that my husband thinks needs a major rebrand so he calls them golden flakes Add in some breadrumbs I’m using plain but you can also use panko Sprinkle on some salt and pepper and mix everything well Forgot to mention but make sure you use a really big bowl because my bowl was too small Add the vegetable mixture to a 9 by13 casserole dish Make sure everything is evenly spread out Place your casserole dish into a preheated oven And although you don’t need to cover it in aluminum foil you will want to make sure you mix the vegetables about halfway through This recipe has been on my website for over a decade and is in the Plant-Based on a budget cookbook So it’s been loved countless times I’m sure you’re going to love it too
