Make sure this is not going to be We got new microphones. We have them around our neck. We’re going to see how they work today. I hope you’re having a wonderful day. We were going to make us some nachos for lunch. And Chris said, “Why don’t we just do it live?” So, I actually curled my hair for y’all for a change instead of wearing my updo. And anyway, we are going to throw this together really quick. You can see right here, I’ve got tomatoes from the garden. We got some pepper, uh, onion. I’m going to just sauté some peppers and onions and use my fajita seasoning cuz that’s what I like on my nachos. And Chris just likes beef and cheese and jalapenos. Okay. And we got a little beef right here that we had left over from making that spaghetti. So, we are going to brown it right quick and use it for our nachos. And I’m just going to throw in a little bit of fajita seasoning. I am not a fan of taco seasoning. I’ve never been a fan of it, even since I was little. Uh I don’t know. I just don’t like the flavor as much as something. It just reminds me, I guess, of I don’t know. I guess cuz mama always used it. Yeah. In other words, it’s not authentic tasting at all. What you want to see? What kind of seasoning? Oh, this is my favorite seasoning, and that’s Beda Fajita seasoning. If I’m making anything Mexican and I want to grab a seasoning, that’s it. Now, I have bought different brands of fajita seasoning. Um, and they’re not they’re not comparable to this. I’m serious. This is so good. It’s like my chili lime that I use in like guacamole. If you have to go on and line, if you have to go online and buy them, they’re worth every penny. So, you don’t have to use a different brand because they’re that good. Okay. Seriously. Um, they’re that good. I’d pay $20 for them just so that I could have a really good M cuz it they last a long time. You don’t have to pay $20. I’m just saying it’s worth it. It’s worth it cuz you spend that going to McDonald’s and this is going to make something taste really good. All right, so I am going to cut up some peppers. and onion and get it going because that’s what I like in mine. Chris is not a big fan of u sauteed peppers and onions like I am, but oh, I love my nachos to have sauteed peppers and onions. And I was like, I can let those sauté while we’re browning the beef. Kind of like fajita nachos. That’s what you like. Yep, I do like them. So, we’re going to get over here and drop these and this skillet with some oil. And I can turn it up now that we’re cooking in it more. So, these are going to be on my nachos. And I like to put a little fajita seasoning on them. Just like that. I had it warm. Um trying to decide what I want to use to stir them with. Don’t really matter, I guess. Now, I like mine to get kind of charred. That’s how I like them to taste. And you know when you go to the Mexican restaurant, lots of them serve uh fajitas on cast iron. They do hot a hot plate already. So to me, they just taste so good. Another thing that tastes really good uh when you’re making nachos is the cheese you use. Now, Chris likes just plain cheese, but to me, I think you got to have queso like they have at the restaurant. And um so I buy queso and I buy the queso that doesn’t have peppers in it. I buy the original, just the white cheese, because that’s what you get when you go to the restaurant. Um, if you have any any kind of sauce on your plate, it’s typically um, you know, like one of their sauces, not something that is in their cheese. Looking good. Now, sometimes I’ll put a little bit of salsa in here. You want me to, Chris? Whatever you like. Um, and this is Matillos. Matteos gourmet salsa. This is mild. I don’t like hot stuff, so I do buy both. Chris likes it to be hot. And if I buy it like this, he can always just put some pepper in it. So, I like to use the fajita seasoning um in my taco meat instead of taco seasoning. And I like to use a little bit of salsa. Whether it’s chicken I’m dolling up or beef, that’s what I like to use. So whether or not you’re making tacos or burritos or whatever you’re making, this is really good. It tastes a lot better than just beef with taco seasoning. Just your average taco seasoning. I’m not crazy about turn. Okay, Chris says I need to turn the fan on. Um, yeah, these these are smoky and they’re best when they’re smoky because you want them to char and they’re not going to char unless you turn them up. Now, our meat’s done. I’m going to turn it off and then this has just got a little bit left. So, we’ll let that sit here and simmer a minute and we’ll get over here again. Y’all let us know how our microphones are doing. Yeah, this is the first time we’ve used these. I was going to put a few of these in there and I forgot, but I love them. Let me throw them in here. So, my nachos are going to be delish. Now, one thing that the air fryer is wonderful for is in the summer, you can warm stuff or cook stuff and it not heat up the house for very long. Um, I mean, it doesn’t take long in the air fryer. It takes half the time in an air fryer as it does in the oven. Okay? So whether you’re making French fries or a sandwich or nachos, by the time you had your oven hot, your nachos would be ready in an air fryer because it takes them three minutes. That’s all it takes them. Three minutes, y’all, which is not long. I’m just cutting this up for the top of our nachos when we get them ready. Yeah, y’all can see we’re about tomatoed out. Our garden’s about done. Yeah, we’re using our last little tomatoes. That one’s got something bad in it. I might can use this side of it. We’ll cut off what we can and use it. Okay. And then here’s some lettuce. We had the best Caesar salad the other night. Woo! It was good. Had some fresh parm on it. It was delicious. I put mine in the freezer. Got my um All right, that’s ready for me. That’s the way I like them. Just like that. Charred. Perfect. Okay, let me show you how to put them together. Now, I’m going to do mine first, Chris, since I got the peppers and stuff on mine, and then he can do his after we go off. I’m going to show you how I’m going to make my nachos, and then he can make his later. Um, now, what I like to use is queso. And this is uh original. And I’m telling you, I really do. I get it when it’s buy 1 get one free. So I buy when it’s buy one get one free, I buy four or so. And that way I don’t have to pay full price for it because it’s expensive. Um and it’s just like the white cheese that they have in the restaurant. doesn’t have. If you get the original, you can flip it upside down and you won’t see peppers and onions and stuff underneath there. That’s what I like. Just the plain old cheese. And these are just lightly salted on the border chips. I put a um this fits in our air fryer perfect. This um 8 in baking dish. Now, you can’t get a baking dish that has handles on it or it won’t fit down in there. You have to get an 8 in cake pan and they don’t they about don’t sell them in the stores anymore. You about have to get it online because they sell 9 in standard now and they don’t sell the eights anymore. Um, but I use a piece of parchment just like you would use when you’re baking a cake down in the bottom and that way it cleans up easy. And I put my chips in here. And then I put my cheese in. Um, let’s do this. Let’s put some meat on it. I don’t know what you’re talking about. It’s this one, honey. It’s making a uh So, put a little meat on here. I’m not crazy about the meat part, so I don’t eat that much meat on mine. I love the peppers and onions and stuff. That’s what I like. And so, then I put this on mine. And Chris don’t even eat this part, but this is my favorite part. One thing I used to like to get at um That’s not picking that up good for me. One thing I like to used to get what was Mo. Was that the name of that place in Yeah. Moe’s Mo actually had peppers and onions like this that you could build your own nachos. And we’ve got a what’s the name of that new place we have here. I don’t like personally. Chipotles. I don’t like it because you can’t build your own nachos in there and they don’t have this either. And so to me, Moe’s is much better if you had to pick one. Um, we don’t typically eat in those anyway. We typically, if we’re going to eat something like that, we could just make it at home. Um, or we just go to the authentic Mexican restaurant. But I can make Mexican food. I really can. Uh, that tastes just as good as the restaurants if I want to. Sure can. What’s weird is like you’ll go to different parts of the country and the Mexican restaurants are different in different parts of the United States. And obviously it’s different than Mexico. Oh yeah. But like we went to uh what was it? We went to Los Angeles. Yes. And we ate at a Mexican restaurant out there and we thought, “Oh, this is really going to be good because it’s California.” And we didn’t even like it. It was more Tex. Yeah. We we didn’t like uh we Yeah, I know it’s different different parts of but um you see how I’m doing my cheese. I do not melt this cheese and pour it over my nachos cuz if you do it all winds up down on the bottom and that drives me crazy. Okay, so if you want to put some of this on the top for fun, you can. And now I’m going to slide it in the uh air fryer and show you how fast it is. There it is. It’ll be ready. And it’s not preheated or nothing. So, you just put it in there, leave it on the 350 setting, hit play, and in 3 minutes, they’ll be toasty and delicious. And I will sit right here and share them with you guys. Let you see how good they look. And then Chris can build his. I could be building his, I guess, while we’re waiting. I’ll build Chris’s. [Applause] Yeah, she’s over there playing. I don’t know what she’s playing with. Good girl. [Applause] Oh, her toy. She sees her toy. Okay, so here goes Chris’s. He eats more beef than I do on hands. Is it okay? So, when you got just a little bit of t when you got just a little bit of ground beef left, it’s great to use it for tacos. Cheese is all you want, Chris. Right. Jalapenos. And jalapenos. That’s all there is to it for him. I don’t get into the jalapenos myself. They’re a little too hot for me. And then if you’re wondering how we get it out of the air fryer once it’s hot, I’m going to show you that, too. Making sure these are good. Look good. These are Dollar General jalapenos. Yes. From the DJI. Is that good? You want some juice on it? Okay. All right. Now, his is ready to go in. Put that hot sauce on. Okay. Hot sauce for Chris. How much? Hot sauce for Chris. I hope I don’t get that. I got that on my finger. Uhoh. Uh oh’s right. Now when we get them out, we sit them on top of a plate because they’re hot. And so I will have to put the stuff on mine once it comes out. Let’s see. It’s been in there two minutes. All we have is one minute left. I tell you what, tell me if you make nachos in your air fryer or you can make any kind of Mexican food in it. You can use an 8 inch pan like we’re using and build you a taco, build you an anch enchilada, build you a burrito, build you a quesadilla. anything and uh cook it in there and it’s quick and delicious. It’s going to get to 98 degrees today. So, I didn’t really want to turn on the oven. And these are the kinds of things you can eat um pretty quick without turning on your oven. All right, y’all. Three minutes. And there you have a delicious hot crispy plate of nachos. And now I’m going to put Chris’s in. Just use tongs. You got You can’t use the ones that have um silicone. They don’t work as good. You got to have something that’s really metal so that you can actually sit it down in there and pick it up out of there. And then you just place it on a plate when it comes out. And um his will be ready now in 3 minutes. So a three that’s a pretty quick meal. And I mean it’s deluxe. I made it deluxe. The only thing I don’t have today is um avocado. Avocado, but I got everything else. So we’ll have some sour cream on it. Yes. These are 8 in cake pans. Perfect for an air fryer. These are USA. They’re on my website. Well, they are for our air fryer. Like I I guess some of those air fryers are different. Yes, the Cass it’s a 5.8 quart Casori air fryer. I tell everybody just to get it. It’s one I think it’s the leading seriously or it used to be the leading bestselling air fryer in the States. Um, and you want to get an air fryer that has a basket that comes out for many, many reasons, not a little tiny one that you can’t get the basket out of. And so, I’m going to have one of these delicious cheesy chips for y’all to see. You can see the cheese on there. Yummy. Delicious. Mhm. Delicious. They’re so good. Sorry. They’re fast. They’re easy. And I hope you give them a try. Now, a lot of y’all may not have ever eaten eaten nachos, but let me just tell you, you should give them a try. You might like them. I know your grandkids will. Okay, y’all have a wonderful and blessed day. And we thank you so much for watching Colored Valley Cooks, where we cook in the air fryer like this mama does. Bye y’all. Love you.

New microphones are not as good as old ones — could be placement below Tammy’s chin. That actually blocks the sound & diverts it out rather than directly over to where she usually clips on the old mic. I used to teach Communications in high school so I’ve done a bit of video recording in instruction. Try this new mic in the old position so that nothing is between your subject’s voice & that mic.
Your voice, too, Chris, wasn’t sharp & distinct like it usually is. Maybe your volume was down at first, but I didn’t notice the small interference in yours, just the volume. You will very likely hear the difference I’m talking about. I cannot remember the 2 different types of mics — maybe universal & directional, but for voice sound recordings in a situation like this, I think the “universal” is preferred. The sounds are picked up from all possible directions, the mic has receivers in all directions. That’s not really the problem, as best as I can remember (I retired in 2000!) Anyway, see what you hear on playback on your own devices as you post & then play. I could be wrong. Your sound quality, even when Tammy is wandering around outside is better to me than this mic down in the front of her midriff. Sorry & please forgive me for pointing out something wrong. Your sound quality is usually quite good on YouTube & before on FB.❤
Thank You so Much for the recipe that your family loves
Yum!! I love any kind of Mexican food!! Today though, I had chips and spinach artichoke dip from AppleBees!! It was really good!! Thanks Tammy and Chris!!
I hardly ever use my air fryer so I appreciate y’all showing me something I can make in it.
Oh Wow!!- your hair looks Fabulous👍 & food looks great😋
Your hair looks really good today.
Hey Tammy & Chris!! Thanks for sharing your nachos recipe with us!! They look delicious!! When I make them I don’t use jalapeños—too spicy for me!! I do use taco seasoning and when I’m out I use fajita seasoning. I use a bit of mild salsa as well. I just got a new air fryer a few months ago and I’ll have to try making them in it. I don’t have an exhaust fan for my stove so it gets pretty hot even cooking on the stovetop. Tammy you’re looking beautiful and I love your hair down!! I hope you, Chris and your family are enjoying your summer!! Have a wonderful week ahead!! Sending you all lots of love and prayers— from Illinois!!🙏🙏🙏😍😍😍💐💐💐
That looks yummy. Thanks for sharing.

Tammy your hair looks very lovely hanging down and dish look delicious 😊❤
The new microphones aren't much better than the last ones. Check out other youtubers who have better sound, also, pay attention to where they wear them. Some actually list what equipment they use.
Your hair is beautiful.
If it just plain cheese then is it still natcho hum🤔 or even mexican 🤔
Tammy, Your long hair looks amazing! You look sooo young.
Joan from NY 😊
Tammy, your hair looks fabulous the way you have it down, very cute on you! I’m with you on taco meat, no taco seasoning for me, just salt & pepper and maybe a little garlic powder…..
Your hair looks good down. I agree with you about the taco seasoning. Not fan. Your nachos look yummy. Thanks, Tammy.
😋 😋
I've never had an air fryer, think'in about getting one, just thinking it would be hard to clean. Any way you would do a video on the best way to clean the inside of one?
Your hair looks so cute!!
No I’ve not but i am going to make them in my air fryer!!! Patty Boise
Beautiful hair Tammy ♥️♥️
Patricia
What brand is the chili lime
Great idea with cake pan. I love nachos. Great recipe Tammy.
Did you know that taco and fajita seasonings have pretty much the same ingredients? Taco season generally has more chilli powder to make it a little spicier while fajita seasoning uses more cumin.
Hey Tammy, do you have 8 inch parchment paper rounds on your website?
I am going to make this vegetarian style. I'm going to use your spice.
Your hair looks adorable like the nachos ❤
Nachos look delicious Tammy. Love your hair, so pretty! Thanks for sharing ❤
Hey Tammy, did you see ALL the compliments you got on your long hair? Just saying.
Have a great week! Joan
🙋🏻♀️FYI…💁🏻♀️RE: CHIPOTLE
☝🏻You CAN BUILD YOUR OWN NACHOS!!!
Substitute chips for rice, add the sautéed peppers and onions, choose your queso, then finish with the remaining toppings of your choice😊
Looks so inviting. You certainly used the best Chips. I love on the border ❤ this is food I love . I’ll be making some today.
I’ve asked this before. Did you ever decide to tell us about all your aprons?
