I am super excited for today because we’re going to be using a recipe off this Godfather cookbook. We’re going to be making the wedding soup. So, in the cookbook, it says that they use ve and pork. Um, but since we do not eat pork or ve, we’re going to be using 93 lean, 7% fat ground turkey. We’re going to put 1 and 1/2 cups of breadrumbs, two garlic cloves. Then we’re going to do 2 tbsp of parsley, and we’re also going to do 2 tbsp of basil. Then we’re going to do half a cup of grated Parmesan cheese. We’re also going to put 1 tbsp of salt. We’re also going to put one cup of tomato sauce, which is 8 oz. We’re going to crack in two eggs. Then we mix. Then it should look like this. Look. And it’s not even stuck on my hand as much. Look at that. You want your meatballs to look like this. So, this recipe calls for some celeries. It says two big carrots, but cuz my carrots are small, I’m going to do uh four carrots, one large onion, spinach, and a skillet. We’re going to put in our meatballs. Don’t need to cook all the way through at this stage. Just a nice golden brown on the outside. So, this how you want your meatballs to look like. Going to splash some olive oil into a large pot. Onion, a carrot, and the celery. And we’re going to cook over mediumigh heat, stirring often until the vegetables are tender. Then we’re going to add half a cup of white wine. The wine came into a boil. Then we’re going to add eight cups of chicken stock. Now that the soup is boiling, we’re going to add these noodles. And then we’re carefully going to put in the meatballs as well. After 10 minutes, we’re going to uncover it. And look at that. One tablespoon of oregano. We’re also going to add our chopped leafy greens, which was spinach. And we’re just going to grab a ladle and pour some. I’m so excited to try this. This is what it looks like. Look at this. Some freshly grated Parmesan cheese on it. Let’s try it. This is the Godfather wedding soup. First, we dink it, then we sink it. Look at that bite. Fully cooked meatballs.
