My buddy gave me two about that size once. He had grown sweet potatoes in his garden and harvested, but somehow missed a couple and found em a month or so later.
I baked em and made southwest sweet potato soup. Added black beans, and cumin. Delish.

So like, what do you do with those? We make baked sweet potatoes every day and we get huge ones that are just ridiculous on a plate. We reused the old baked ones for sweet potato bread pudding, so we’ve been using them for that. But it would be nice to reuse the waste for the pudding instead of monster sweet potatoes.
