True story, I had no idea last Wednesday what to make for dinner. And this chicken picata actually saved me because even though it sounds fancy, it’s really simple to cook. So, what I did was I took some chicken breasts. I pounded them until they became a little bit thinner. I seasoned with salt, pepper, and some garlic powder. And then I dredged them in some flour. And then you brown them in a little bit of butter and olive oil until golden brown on both sides. After you fry the chicken in the butter and olive oil, you get it nice and golden on both sides. Add your lemon juice, add your capers, add your chicken broth. Then you can even add some heavy cream and some extra seasoning. Now, I use heavy cream because I wanted my sauce a little bit thicker. And it’s up to you if you want to use heavy cream, but you don’t have to use it. But you do want to let it cook in until it thickens because it makes a nice sauce over the chicken. I served it with mashed potatoes and string beans, and my family loved it. I’m sure yours will, too. Toodles. Bye for now.
