I’m officially ranking this as a top tier recipe because it’s pasta (win) it’s high in protein (win) but you don’t have to cook any meat (time saving win) and it took my literally 15 minutes to make a giant batch (win.)

I love getting creative with simple recipes and this is one that I’ve been playing around with for a couple of years, this ratio for the pasta sauce makes it sooo thick and creamy and was enough to cover two full boxes of pasta so cut it in half if you’re making just one😊

2 medium/large sweet potatoes
1/2 cup greek yogurt (ideally 2% for added creaminess)
1/4 cup olive oil
1/4 cup nutritional yeast
salt, pepper, garlic powder (or fresh garlic if you have it!)
1 cup or enough milk (any unsweetened milk works, I used almond) to blend thick

Microwave the sweet potatoes until soft (usually up to 10 mins) and then combine all ingredients in a blender. Blend until smooth then heat on the stove and stir in your pasta of choice.

If you want to make this totally dairy free, I would replace the yogurt with a Greek style dairy free yogurt or dairy free plain cream cheese!! Enjoy!!!

This high protein mac and cheese actually has no cheese at all. It’s made with sweet potato and Greek yogurt. And before you’re like, “No, thank you. Bye.” Give it a shot.
