No food coloring was used. The only cocoa powder I found that could produce this deep of a black color was “the cocoa trader” black cocoa.

I like to go to Amish country and get the variety of cocoa. I have the black, aristocrat, and Dutch sitting in my cupboard. I make wacky cake (the depression era cake that seems to have made a comeback recently on TT) because my vegan cousins could enjoy it, and my grandma still had the recipe from when she lived through the Depression. I make it with the black as well as the aristocrat cocoa, and both tend to be eaten regardless.

I’ve made these before! How did they taste for you? I find that the black cocoa has a more subdued flavor, much less chocolatey than I personally wanted for a brownie.
Also, it made me INCREDIBLY sick. My husband loves the black cocoa flavor but I have learned that I can’t eat anything with even a little bit of it in there. Just fyi.

I just bought black cocoa labeled “ Spanish cocoa”, just for the color. Agreed: flavor is more like burnt coffee and not in a good way. I’ve been mixing it with my regular cocoa for depth and color. I’m hoping someone has more insight on it and how best to use it…clerk at chocolate store was not helpful.

You can still use regular cocoa powder and a tablespoon or so of the black cocoa to a deep colored brownie.

I make black cocoa brownies all the time! When I do them, I mix regular cocoa powder with black cocoa powder which enhances the taste and makes them look a bit more appetizing (brown crust but black inside)

Love me some black cocoa brownies! I use the brand Modern Mountain and find it way better than regular cocoa powder. I’ve been experimenting with my recipes to see what ones I can swap cocoa powders with and end up better using the black cocoa.
