WATERLOO, Ill. — The owner of a St. Louis-area Italian restaurant plans to take over a well-known restaurant in Metro East.
Hines Hospitality Group, owner of Roberto’s Trattoria & Chophouse and Zanti’s Deli in south St. Louis County, has signed a lease to take over Gallagher’s Restaurant in Waterloo, group owner Matt Hines said this week in a social media post. He and his wife, Jami Hines, created the restaurant group when they were acquiring Roberto’s in 2022, according to the Italian restaurant’s website.
Gallagher’s, which has operated out of a historic building at 114 W. Mill in downtown Waterloo for 20 years, will be rebranded as Geno’s Trattoria & Chophouse, Matt Hines said in the post. It is not related to another Metro East restaurant named Geno’s that has operated in Bethalto since 1942, Geno’s 140 Club.
