


This sub turned me onto the Weber kettle. Unboxed it today and threw on some thighs for my first try. Wife and I both agreed it was the best chicken either of us has ever had.
Used a piece of pecan wood in the middle, duck fat spray (another thing this sub turned me onto) on the skin and hit em with kosmos apple cherry habanero glaze at the end. So easy and so good, where has this been all my life?!

Love the vortex. Just before you pull the meat off the grill, open the air dampers and let the coals really glow. Then each thigh gets just a few seconds over the hot spot for extra char.
Also good if you have one piece that is significantly thicker than others – you can put it over the heat for a bit every time you check the grill or turn the meat over.

I find that using the vortex you will need less fuel, for an average cook (family of 4) I’m using around 20 Weber briquettes and I can keep the temp at constant 180-200C and cook indirect before searing over centre
