4 Meals from 1 Rotisserie Chicken — Meal 2: BBQ Chicken Pizza

I used one chicken breast from the same rotisserie chicken to make this easy deep-dish BBQ chicken pizza. Makes 2–3 servings.

What I did:

• Shredded one chicken breast and mixed with BBQ sauce
• Pressed canned pizza dough into a small oiled baking dish (for deep dish style)
• Tip: Par-bake the crust first for crispier edges
• Top with the BBQ chicken, pizza blend cheese (mozzarella + cheddar), and thinly sliced red onion
• Bake until the crust is golden and the cheese is bubbly

I’m making four different meals from a single rotisserie chicken. And tonight, we’re using one of the breasts to make a barbecue chicken pizza. It’s easy, filling, and customizable depending on what you’ve got. I started by shredding up one chicken breast and mixing it with a generous amount of barbecue sauce. Don’t be shy with it. This is the main flavor of the whole dish, so go heavy if you like it saucy. For the crust, I used a canned pizza dough and pressed it into an oiled baking dish. I was aiming for like a crispy deep dish style pizza. And this method does give you nice thick slices. And if I were doing it again, I’d probably par bake the crust to get those edges a little crispier. But even without that, it still turned out great. Once the crust is in place, spread on the barbecue chicken and top it with shredded cheese. I’m using a pizza blend that’s a mixture of cheddar and mozzarella, and it works really well with the sweet and smoky barbecue flavor. For a little extra flavor and crunch, I added some sliced red onion. That part is optional, but it’s a classic combo for a reason. Bake it according your crust instructions until everything is golden and bubbly. That’s two meals down, two to go, and we’ve still got another breast and all of the bones left.   4. My favorite variation on this is to use a muffin tin and cut out the crust. Other than that, exactly the same. I don't parbake unless I'm out of pie crust and have to make my own because a pourable crust is easier and it requires the parbake.

  5. Wonder if I could ask, now I know I can make this myself, but could you try and copycat the McRib? It looks easy, depending on the recipe. And cheap! Just want to see what you think.

  6. You can buy precooked shredded rotisserie chicken in the deli area of most major grocery chains – and Aldi's as well! A 1 lb package is $8-10, and saves the time of having to dissect the rotisserie chicken yourself. Pound for pound, it's about 30% more expensive, but worth it to me for saving time and mess if you aren't using the bones for soup stock.

  8. Yum! We love making bbq chix pizza! We add crumble bacon when we have it. Also, no knead pizza dough is so cheat & so easy!

  9. We make this all the time! The only difference is we usually also top with bbq sauce (lol) and we use Rhodes frozen bread dough which is a little over $6 at my Walmart which makes it a little over a dollar per loaf/pizza!

  10. Highly recommend adding lots of red chile flakes or some sliced jalapeños on the pizza. The spice takes it up a notch. Pineapple is also good with this one!

  11. I don't understand using cooked food the more times you reheat an already cooked Foods the more you're going to lose nutritional value

  12. Ignore crust instructions, par-bake at your ovens max temp. I even use the broiler occasionally to get it extra crispy after it's been par-baked.

    I used to use those premade pizza dough rolls, instructions always led to lackluster results for me.

  13. It's so much better when you use the marinara spaghetti sauce as the base in the chicken just have the barbecue it is a million times better I promise you
