Grilled Calamari Recipe
Ingredients (serves 4):
1 lb (450g) cleaned calamari (tubes and tentacles)
2 tbsp olive oil
2 cloves garlic, minced
1 tsp lemon zest
1 tbsp fresh lemon juice
1 tsp smoked paprika
1/2 cup wine
2 tsp tomato paste
1 tsp salt
1/4 tsp black pepper
1 tbsp fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions:
Prep Calamari: Rinse calamari under cold water, pat dry with paper towels. If not pre-cleaned, remove the backbone and innards, keeping tubes and tentacles intact.
Marinate: In a bowl, mix olive oil, garlic, wine, tomato paste, lemon zest, lemon juice, smoked paprika, salt, and pepper. Add calamari, toss to coat, and marinate for 15-20 minutes at room temperature. You can leave it longer if you wish.
Preheat Grill: Heat grill to medium-high (about 400°F/200°C). If using a grill pan, heat over medium-high on the stove.
Grill: Place calamari on the grill. Cook tubes for 2-3 minutes per side until lightly charred and opaque. Tentacles may cook faster (1-2 minutes). Avoid overcooking to keep tender.
Serve: Transfer to a platter, sprinkle with parsley, and serve with lemon wedges.
Tips:
Score the tubes lightly in a crosshatch pattern for better texture and marinade absorption.
Serve with a side of aioli, chimichurri, or a simple green salad.
