    Pies or slices are hard to garnish- simple is usually better – So I’d do a quenelle or dollop of cream on tart – Chop up the nuts – and sprinkle on top of cream, maybe cascading down onto plate – then tuile

    Flavour profile is perfect, the components are perfect. You should pipe the whip on differently, maybe dots or quenelle if possible

    Love the tart, hate the plate. Cinnamon custard sounds delicious. The hazelnuts could be shiny, but it’s not like that would put me off them either. Couldn’t fault the bake, looks exactly right.

    Looks like the custard has boiled, so its gonna be weepy and may lack that yummy texture you were going for. Too much heat too fast.

    It’s not a thing you come across everyday, so I am immediately intrigued.
