Why do I never see people here talk about soup? I made 12lbs of soup yesterday. The whole thing is ~1000 calories (recipe in comment)!

    So I recently learned I love king oyster mushrooms but they arent common in normal grocery stores so I went to the asian market. I was so inspired by their mushroom selection I decided to make soup. I got way too much stuff! lol

    This soup contains:

    * 200g shiitake mushrooms

    * 250g king oyster mushrooms

    * 200g enoki mushrooms

    * whole red onion

    * 25g ginger

    * 4 cloves of garlic

    * 1 leek

    * 300g of squid (it was frozen and precut into the spikey thing in the picture above)

    * 200g of brined lotus rootlets

    * 600g of baby bok choi

    * 8 tbsp dark soy sauce

    * 1-2 tbsp fish sauce

    * 1 tbsp oyster sauce

    * 3 tbsp better than bouillon chicken flavor

    * 2 tbsp gochujang

    * 5 tbsp rice vinegar

    * salt, pepper, 1 star anise pod

    * 1 to 1.5 gallons of water

    And probably some other things Ive forgotten. All together it was around 1050 calories and made 5550g of soup. A full bowl is about 500g so thats just about 100 calories per serving. And its pretty filling too! Combined with some sides, or with the addition of some noodles suitable for soup it would make a fantastic and sensible meal!

    Thank you for sharing this recipe! Soup is one of the best low calorie hacks. Unfortunately the hottest days of summer are here and it’s too hot for delicious soup. 🥺

    I love soup. I made a ground chicken breast cabbage soup and it was 270 for 3 cups

I make what I call summer vegetable soup with chicken broth, a bag if frozen soup vegetables, zucchini and whatever greens I have available (spinach, kale, and lately radish greens from my garden!), then I add whatever bean I have on hand – it’s lentils this week, last batch was cannellini beans. A big bowl is under 150 calories, and so filling with a half sandwich and fruit for lunch! I’ve been hitting both my fiber and protein goals when I have soup!

    I’ve actually got a pot of curry-spiced carrot soup on the hob as we speak. Super basic but really filling. Around 120 cals a serving too!

    Oh i meant to say while the soup is good; I feel its missing some “sharper” aspect. Maybe more salt, but I was thinking maybe more acidity. Any suggestions (besides way more vinegar)?

    This looks sooo good! I love soup, but I only make it during the fall & winter. Way too hot and humid in my area right now for me to want hot foods.

    Yeah I’ve wondered this too, why do I never see people eating soup. I rely very much on instant ramen, which is about 360 calories for the pack. 360 calories for a meal work super well for me

    As a Mexican I am greatful for low calorie soups, plus they don’t bother me in the summer, I grew up eating hot soups in summer lol.

    I make soup all the time and I love it. Sooo filling, soo tasty. The only bad thing is that I live in a literal desert so the time of year where hot soup is tolerable is brief

    Love this. I love soup for diets too but never thought about adding squid. I have to try it!
