This Cacio e Pepe inspired chicken and broccoli casserole is an unbelievable freezer meal you can prep for those nights when you just really don’t feel like cooking. Add some crushed potato chips at the end if you feel like appeasing the Midwest casserole gods.

Ingredients (single casserole, I made it in bulk in the video):
– 12oz pasta (I like fusilli or penne)
– 1lb shredded rotisserie chicken (buy one, you’ll thank me later)
– 8oz frozen broccoli florets
– 4oz pecorino romano
– 2-3 tbsp butter
– 2-3 tbsp flour (I use GF flour)
– 1 cup chicken broth
– 1 cup milk (I use 2%)
– 1 tsp salt
– 1/2 tsp oregano
– 1/2 tsp thyme
– 1/2 tsp white pepper
– 1/2 tbsp black pepper (keep separated from other spices)
– 4oz of mozzarella, Monterrey jack, or a mix of both for topping
