There’s no thing called as Mexican rice.
This recipe is carbohydrate heavy too due to 100 grams red beans and vegetables. I would suggest using cauliflower rice as rice substitute, and substitute boiled peanuts, Greek yogurt and soybean chunks instead of vegetables.
