Welcome back to Pete’s where we’re making an olive tapen. Perfect companion for any sandwich. We’re going to start with 4 ounces of Spanish olives. We’re going to add 4 oz of black olives, 4 oz of castle vetrono olives, the secret ingredient. Going to add a few strips of sun-dried tomato. Add a tablespoon of capers, teaspoon of dried Italian seasoning, one minced garlic clove, one teaspoon of minced shallot, and one large basil leaves sliced. 1 oz of freshsqueezed lemon juice, some fresh ground pepper, and 3 tablespoon of extra virgin olive oil. Give that a pulse in a chopper or a small blender. Be sure not to over mix cuz we’re not looking for a paste here. We want a nice texture.
