Ok, so I started the XL and got it up to temp (235) around 9pm last night. 2x 7.5lb boneless shoulders. Checked it at 0530…at the stall at 150, Egg still holding at 235. At 1030, had only gotten to 165! Still, did not open for a peek. At 1130 I was worried the charcoal was dying out so I opened it up, removed everything and stoked the charcoal (plenty still yet to burn but it was struggling), replaced everything and got the Egg up to 250 to try it hurry things up. It is now 2pm and the pork is still only at 181. 🙁

anywhoo’s, that’s the post….just kvetching and impatiently waiting to wrap it, throw it in the cooler, etc.

    no idea why people try and baby pork butt of all things. run that shit at 275-300 you won’t be able to tell a difference.

    It’s frustrating how different cook times can be. Last year I had 2 family functions in the same week. I bought 2 butts that weighed the same. The first one was finished in 8 hours and the second took 12.

  4. 235 is too low.  Thats like 20-hour smoke territory.  275 – 300 is my sweet spot.
