Make pickled peppers. Learn about home canning and put them in jars, they’ll look pretty for up to 18 months. Also, I find that the heat comes down after they rest in the brine for a couple of months.

My girlfriend did this once. I usually do the cooking but this time she wanted to do it. After a while I can tell by the air that something was off, I sat about 10m away in another room but still felt it. I yelled out asking what she had done, but she was oblivious. I went out to the kitchen and aksed her what chilli she used, she said it was a Habanero, but I pushed some more questions and pretty quickly found out that she had misstaken a Carolina Reaper for a Habanero. She was doing ramen for just the two of us.
We all feel brave at some point and take the dive into that temptation. We live on regrets and optimism that the next time it won’t be as bad

I’m really excited for my peppers this year, they’re actually producing great so far. Most excited about the sugar rush peach ones I’m growing, never tried them before but heard such good things.

i love to make those instant pho dishes too! and like you i add hot peppers to em. but way more mild i made madamme jeanette (hab heat levels) flakes last season and they are my go to for a lot of things!
