    You probably aren’t in Southern Ontario (Toronto area) so any advice doesn’t apply.

    Getting fresh rice noodles is so hit and miss from the various Asian markets.

    More often than not, it’s sat in the fridge too long, starches crystalize and I’ve never been able to figure out how to decently get everything to separate without a tonne of breakage.

    Getting good and supple plain rice noodle rolls is much easier so I end up prepping by unrolling and cutting those.

    Looks incredible- those are bigger chunks of green onion and beef than I’d prefer, though.
