I bought this pepper plant labeled as a pepperoncini but I have my doubts and I'd like thoughts on what kind it is. They aren't very yellow and more red/brown as they're ripening as you can see in the pictures. I tried a green/unripe one and the flavor was bitter with no spice so l'm assuming they should be picked when they're red? Kinda bummed bc I was hoping for pickled pepperoncinis😕

Pepperoncini is kind of a loosely used term anymore. While pickled pepperoncinis found in the store are typically a yellow pepper that starts off as a very pale green then goes to yellow then will turn red if you let it, it seems that most pepperoncini seeds sold are for “pepperoncinis” that go from med green to dark green to red (like red peppers do). The brown color you see is what you get when a green pepper is transitioning to red. Red+green = brown. You apparently have the type of “pepperoncini” that isn’t yellow. I hve my doubts that the “pepperoncini” peppers in the stores are actually pepperoncini peppers, they just call them that and that is what we know in America as “pepperoncini”, which merely means “little pepper”.
Try them brown or red if you don’t like the green pepper flavor and hope they turn hot. But if they don’t you can always add some cayenne powder to your jars when you pickle them.
If you prefer yellow pickled peppers maybe try hot banana peppers next time.
