and what do we have for dinner that we’re going to have the steak Florentine now for this you need the steaks nice thick cut steaks um you’re going to need garlic cloves pork fatback dried rosemary coar salt kosher salt for this works really nicely uh and you need black pepper you’re going to rinse the steaks under cold water you’re going to Pat them dry with a paper towel you’re going to leave them on the platter for about 20 minutes so that they get up to room temperature and they’re not you know they’re not ice cold all the way through you want them kind of warm and and uh a room temperature now in a food processor you’re going to blend everything else you’re going to blend the foot fat the pork fatback the garlic the Rosemary you’re going to make it like a pasty like consistency next massage this mixture into the stakes taking the time to make sure that you’ve worked it into the meat and the mixture as well now season it again with some salt and pepper and set it aside you’re going to go out and light the grill you’re going to turn the heat up to high you’re going to clean the grill with the brush uh you’re going to give the grill time to heat up make sure that the grill is really nice and hot when you put the steaks on it
