Ingredients for Tomato & Zucchini Soup:

1 kg zucchini (3-4 zucchinis), cubed

1 kg tomatoes, cubed

1-2 tbsp butter

1 large onion, chopped

2 garlic cloves, minced

2 tbsp flour

1 tsp turmeric

1 tsp black pepper

Salt to taste

1 liter chicken or vegetable stock

Ingredients for Homemade Croutons:

2-3 slices of bread, cubed

2 tbsp olive oil

1 tbsp dry oregano

Salt and pepper to taste

Instructions:

Start by slicing your zucchinis and tomatoes into cubes.

Melt butter in a pot over medium heat and add the chopped onions. Cook until soft and translucent.
