I tried it today without the giant flavorizer bar/deflector. First I preheated it to 500 then turned it to manual 10. I only used the two grates on the sides.

I threw on the short ribs and got the sizzle. Some chicken thighs on the griddle. Same start… except this time the sizzle didn't stop! I did close the lid in between flips, as I would on a gas or charcoal grill.

Up close all the grease would be sizzling on the surface as well, as I'm used to on real grills.

The top of the main heat deflector got up to around 860. The key is the real "DirectFlame" heat hitting the meat, rather than a convection oven.

I was quite happy with the way the meat turned out. The thighs I left on a bit during the 15 min shut down process and left it closed to bake them to a finish.

Overall I am quite happy with how this turned out. I was getting pretty bummed I couldn't sear/grill as advertised on my expensive purchase that I can't return or sell without a huge loss.

I recommend you all try it! Weber's design allows direct heat out the sides without grease getting into the firepot. Looking forward to smoking as designed but grilling when I want as well.

    But what if you want to grill more stuff than will fit in the corners?

    What pellets are you using? Don’t have any problems with the cast iron grate + flavorizor
