Sometimes you just need a really good dipping sauce!

I’m making dim sum. First, I need the sauce. And we start with the soy sauce. I’m just going to pour a little bit in here. Probably about a/2 cup. And we’ll add a few splashes of rice vinegar. I got a little red chili. And we’re add a little scallion. I got some garlic. And I like to add about a tablespoon of sugar. And we stir it up. So, let’s start some pot stickers. I want to show you how to make a super crispy crust. I’m using these today. I ain’t making them, guys. You can use whatever you want. I got half a cup of water, 1/4 cup neutral oil, about a tablespoon of flour, about a tablespoon of cornstarch, and a little pinch of salt. and we start. Let’s start cooking. So, I got a hot pan with a little oil. I throw my dumplings down in there. Let them go for a second. Let them start getting a little crust on them, little brown. Then, go ahead and throw that slurry in there. Once you get that in, go ahead and put a lid on this. Let that evaporate through. It’ll steam your dumplings. Meanwhile, in another pan, I’m going to start cooking my pork pot stickers. I’m just going to fry them on all sides. And then I have these other dumplings. They appear to have some sort of coating on them. I’m just going to roll with it. So, this is looking good. I got a nice crust. I pull it out. I do this little flip over move on my plate. And I see it looks absolutely perfect. Guys, I got some bow buns, too. So, I take a wet paper towel. Just going to wrap them up in there. This will be perfect. Throw them in the microwave for a second. They should come out all hot and steamy. I got some soup dumplings, too. Just going to pull those out. The directions say microwave. That’s what we’re going to do. So, let’s plate. Pork pot stickers go down. Those little fried dumplings are going down, too. Bow buns in a bowl. Soup dumplings are ready. And that crispy chicken ginger dumpling. Those are perfect. Guys, we get our dipping sauce. We’re good to go. It’s time to eat. I don’t even know where to begin. Let’s check out the bow buns. They have the barbecue pork inside. That looks good. M. I like that the pork has good flavor. A little bit sweet. Great way to start. Let’s get right into these ginger chicken dumplings with the skirt on them. They’re so crispy. Just going to break some pieces like that. We go right into our sauce. I could stop right here. This is great. The skirt is so crispy and delicate and light. So, this is a classic pork pot sticker again. Really good. A simple cook. Crisped them up on the bottom. Flipped them around. Crisp them again. These are delicious. Now, these little guys look like they were breaded and fried. I didn’t expect that. I thought they were just going to be dumpling style like the other ones. So, we’re going to try it. Let’s try it out. So, that one’s not my favorite. The breading kind of overpowers. All I get is this deep fried taste onto the soup dumplings. These I’m excited about. I’m going to give a little dip. That’s good. Super soupy. It’s got good flavor. Definitely the winner today are these crispy chicken ginger skirt dumplings. All in all, total success dim sum in my own kitchen at home. What a treat. Thanks for watching. Cheers everyone.
