A tequila sunrise is a classic cocktail for a reason—just look at that gorgeous gradient! To take it even more firmly into vacation territory, we’re swapping the orange juice for pineapple and adding Champagne to give it a little sparkle. The result is a bubbly, tropical drink that’s perfect for sipping by the pool, enjoying at brunch, or for partying with all night long (’til the sun rises, if you like!).
Some tips to make yours the best it can be: We recommend looking for a drier Champagne or other sparkling wine—it’ll help combat the sweetness of the pineapple juice. We kept the garnishes au naturel, but this is definitely the kind of drink that would welcome a little umbrella or a little monkey swizzle stick.
Want to batch these? They won’t be quite as beautiful, but you should be able to combine the pineapple juice, grenadine, and tequila ahead of time, then top individual glasses with Champagne to serve.
