📜 COUNTRY SALAD RECIPE
Ingredients (Serves 4):
• 800g small salad potatoes
• 2 spring onions
• 15 cherry tomatoes
• 1 green pepper
• 1 red pepper
• 4 hard-boiled eggs
• 2 tins of tuna in oil or natural, drained
• 20 green or black olives
• 100g extra virgin olive oil
• 2 tablespoons of sherry vinegar
• 30g lemon juice
• Ground black pepper
• Salt
• Fresh parsley to garnish
Preparation:
1. Place the whole potatoes in a pot with cold salted water. Once boiling, add the eggs and cook for 10 minutes. Remove eggs, cool them in ice water, and peel.
2. Continue cooking the potatoes until tender, drain, let cool, then cut in halves.
3. Wash and dice the peppers, halve the cherry tomatoes, finely chop the spring onions, and halve the olives.
4. Combine the potatoes with the vegetables and olives in a large bowl. Season lightly with salt and pepper.
5. For the vinaigrette, emulsify the extra virgin olive oil with sherry vinegar, lemon juice, salt, and pepper.
6. Arrange the tuna and quartered eggs on top of the salad. Drizzle with the vinaigrette and garnish with fresh parsley.
