This is the ultimate barbecue chicken salad recipe. It’s easy to make, packed with protein, and loaded with vibrant ingredients like crisp lettuce, juicy cherry tomatoes, black beans, and sweet corn. It’s all tossed in a creamy barbecue ranch dressing. For the dressing, you’ll need 1/2 cup of ranch dressing, and 1/3 cup of barbecue sauce. We used our healthy homemade ranch dressing and smoky barbecue sauce for this recipe. Thoroughly mixed. Then assembled the salad. You’ll need six cups of chopped romaine lettuce. Then you’ll need 12 oz of fully cooked chicken breast that’s diced or shredded. 1 and 1/2 cups of corn. We used frozen corn for convenience. 1 15oz can of rinsed and drained black beans. After that, add one pint of cherry tomatoes. Have them or quarter them before adding them to the salad. Then add 1/2 cup of shredded light Mexican cheese blend. After that, add 1/4 cup diced red onion and 1/4 cup of chopped cilantro. Once you’ve added all of these ingredients to the bowl, it’s time to add the barbecue ranch dressing. Pour the dressing over the salad and toss until everything is evenly coated. Then serve this barbecue chicken salad and enjoy.
