Welcome to Mimi’s Kitchen. Oh y’all, it’s still hot here in South Carolina. I’m not going to even talk about that today, y’all. It just makes me hotter just to even think about it. So, what we going to do today? We’re going to think about something cool. Oh, yeah. Oh, yeah. And um I think all of us are looking for some kind of dessert that’s short, quick, easy to get together, and I have just the one for you. Key lime pie. Now y’all, in the low country, a lot of the seafood restaurants down there serve this. It’s kind of like the premier dessert. I have a good recipe right here. Very simple in Sunday lunch at Mimi’s, right? Yeah. And so, let’s get right to it. KKK. The recipe calls for a 9 in graham cracker crust, but you know what? I decided we’re going to go old school today. We’re going to make our own. Okay, let’s do it. All right, let’s do it. So, all it calls for is a and the graham cracker crust. And y’all just follow the instructions on on this particular thing is on the side of the box. Okay. So, it’s graham cracker crumbs. Yeah. Okay. All right. Recipes right there. Yeah. Right there. All right. So, a fourth a cup and a fourth of of the crumbs, a fourth of a cup of sugar. Okay. All right. And then it just says to mix that. Y’all, there’s a restaurant down there and they make their own. And I think one of the secrets is they make their own crust. Mhm. And so I decided, well, we going to do we’re going to make our own today, too. All right. Now, then it calls for um a third of a cup of butter. Oh, yeah. Yeah. And so that’s that’s a third of a cup that there. So, you’re going to melt that? Oh, yeah. We’re going to melt it. And our butter is melted as well as ourselves. That is right, Mimi. Yeah, y’all. We just get so used to using our conveniences that we forget that the we can make these things ourselves. We had a little bit of extra time today. Yeah, we do. So, we said we would make our own crust. Yeah. Or you would make your own crust. Well, all right, y’all. Let’s Now, see how easy that was? just says just put it in here. Well, since we gonna use our hands anyway to All right. Press it. To press it. Yeah. To press it in there. This up around the edges. I’m going to leave a little bit loose. KK. Okay. That’s the way I remember the one that we we get down in Buford that we love so much. Oh, that we love so much. Oh my goodness. Oh, and y’all, I was in this store and um well, it was a it was a seafood store and and and they had this case and they had several pies in there. Well, key lime pie was one of them. And this guy, he was just standing in line. He said, “Oh,” he said, “If you want good key lime pie,” he said, “you get that one right there.” He said, “It is so good.” Well, and you did. I bought it. Evidently, he’d never have a good key lime pie. So, you can’t always pay attention to these people. All right. He hadn’t had the ones we’ve had, right? No, evidently not. I started I wish I knew his name. I’d go back and find him, tell him where to go. Really get a good key lime pie. Y’all, the instructions say to bake this thing on 375 for 6 to 8 minutes. Well, I’ve got to use my oven in a minute on 350. So, I’m going to bake it just a little bit longer on the 350. Okay. So, let’s put it in there. KK, let’s let’s do 10 minutes. Okay. Okay. All right. And we’ll be back in a minute. And we’re just going to sit it right up here on our cooling rack. Okay. Okay. All right. Here we go. Now, the first thing that we have is 8 oz of softened cream cheese. Okay. All right. We’re going to beat this until it’s creamy. Okay, y’all. Now we’re going to add now one can of sweetened condensed milk. See? Let’s get it all KK. Okay. You know how hard that is, but we’ll do our best here. We’ll mix this and we’ll be right back. Y’all, I have found over the years that if you find a fresh can of condensed milk, your pie is so much lighter, y’all. Look at that. The color. The color. It looks so good. That tip is free. We’re going to need three eggs for this. And And of course, you know, I use egg glands. And um we’re going to use just the yolks now. So, I’ll save the wipes because I can use them later. So, let’s see here. Oh, y’all, that one has a double yolk. Oh, wow. Look at that. Let’s see what this one has. Okay, y’all. The recipe says three yolks. Well, we’ve got three yolks, so we don’t need this egg here. So, we’re going with it. No, I know. So, we’re going with it. All right. Okay. You’re going to need a half a cup of lime juice. And y’all, I have found that this is the very best. Let me tell you something right now. This is called Nelly and Joe’s. Now, they make a lemon juice. They make a lime juice. Well, the whole time I’ve had my lemon out and when we get ready to put it in the pie, KK said, “Mama, that is lemon juice.” And I said, “What?” And I said, “I.” So I went to the refrigerator, opened it. Guess what? There was my lime juice. So be careful. Green top. So be careful. All right. Oh, we got to get this stuff well acquainted here. All right. Now, see, the minute you put that in, it starts to thicken. See how nice and thick that is? Oo, we Okay. Okay. That looks so good. I know. I’m going to get it all, y’all. Just give me a minute here. Okie dokie. I promised KK we wouldn’t use oven, but we’re only using it for 10 minutes. Okay, I’ve done that before. So, okay, y’all on the bottom rack. 350° for 10 minutes. Hey, in 10 minutes we’ll be back. Oh my, the magic sound. Hey y’all. We love that magic sound. Oh, doesn’t that look pretty, KK? Look at that. That looks so pretty. All right, let’s put it up here on our cooling rack. Okay. All right. Now, this has got to cool, y’all. The instructions say to let it cool um in just to room temperature and then you put it in the refrigerator and let it chill for at least an hour before you serve it. So we will see you later on today. This has been chilling now I would say for maybe three hours. I ran some errands. So, let’s All right, let’s see. KK, I just like to cut it all the way then that way I don’t get this thing wopsided. Okay. Oh, yeah. Oh, here we go. All right. That looks so yummy. I know it. I wish I knew that man’s address so you could send him a piece. That’s right. Oh y’all, that is so good. I’m going to take Let’s see. Let’s Let me make sure that it’s Make sure it’s good. Oh, y’all. I just have to keep trying this. But I’m going to tell you now. I’m glad I made my own crust. Now, I take that shortcut and I I get little ready-made crust, and that’s that’s fine. And when I’m in a hurry, that’s what I’ll do. But it didn’t take much to make it to tell you the truth. And so it does kind of make a little bit of a difference. You know, a lot of times when you hear key lime pie, you think, “Oh gosh, that is so difficult to make.” But now you saw me make that pie and you saw how easy it was. I think I can make it, Mimi. Okay. K. All right. We’ll let you make one. Oh, I hope y’all will make this pie. It is really going to knock your socks off, y’all. And y’all have a great week.   5. If you're feeling fiesty, you can make yiur own graham cracker crumbs by crushing graham crackers with a rolling pin in a ziploc! That's how my mom used to do it!😂

  6. i found this while looking for a meme. instead i found this and i watched till the end and i forgot how much cooking videos help my mental health. recently i've been going through something with my friends and i have none at the moment and i've been crying a lot and it's been hard to be happy and enjoy life and i tried to cheer myself up with a banana bread meme and i saw MeMe's banana bread recipe. i watched it and i felt so much happier. so i decided to watch more and i've never felt this happy for months. so for that ridiculous coincidence of banana bread. you definitely have a new subscriber for making my day 1000000x better.

  8. Here in AZ we don’t have the wonderful fresh lime juice like yours so no had to squeeze a bunch of little limes and I have to tell you it was the best key lime pie I’ve ever had!!! Not to brag about your KL pie recipe or anything!! 🤣🤣🤣🤣🤣🤣
