I’m making chicken enchiladas. This salt is lime and foods. This cumin spice smells so good. Spreading it. It’s nice and even. I have the best subscribers. I go and get messy. Now I’m adding taco seasoning. Fiesta spice olive oil. Put it in the oven for 20 minutes. Jalapo D. Jing the jalapeno. Setting the chicken. Time to put it in the red bowl. Chicken in the bowl. Add the corn. Add the jalapeno. Pour it in the bowl. Jalapeno balsamic looking good. Adding olive oil. Add flour. Let’s get together. [Music] Adding the chicken broth. Adding sour cream. Time to fill in the tortilla. Wrapping them. Adding the white sauce. Top it off some cheese. Put it in the oven. Bake for 20 minutes. [Music] Let’s see it. Oh, yummy. Best meal ever.

WHITE CHICKEN FIESTA ENCHILADAS
INGREDIENTS:
2 Chicken Breasts
3 Tbsp Cumin & Garlic Taco Seasoning, divided
6 Tbsp Fiesta Spice Infused Olive Oil, divided
1 cup Corn, fresh or frozen
2 Jalapeños, diced
1/3 cup Jalapeño Lime Balsamic
2 cups Monterey Jack Cheese, divided
2 Tbsp Flour
1½ cups Chicken Broth
1 cup Sour cream
8 Corn Tortillas
INSTRUCTIONS:
1. Heat oven to 400F and line a baking sheet with parchment paper. Rub chicken with 2 Tbsp Cumin & Garlic Taco Rub and 2 Tbsp Fiesta Spice Olive Oil. Bake for 20 minutes or until done and shred with two forks. Turn down the oven to 375F.
2. In a bowl add chicken, corn, jalapeños, Jalapeño Lime Balsamic, and 1 cup Monterey Jack. Set aside.
3. In a high sided saucepan, heat 2 Tbsp Fiesta Spice Olive Oil then add flour. Cook 2-3 minutes while whisking to prevent the roux from turning brown.
4. Add chicken stock slowly while whisking and cook for another 2-3 minutes. Add in the sour cream and the remaining 1% Tbsp of rub. Set aside.
5. In a small skillet, heat 2 Tbsp of oil over medium, cook tortillas 2-3 minutes per side.
6. Build the enchiladas by adding 2-3 Tbsp of filling into each tortilla and rolling. Arrange in a baking pan.
7. Pour sauce over the tortillas and top with remaining cup of cheese. Bake for 25 minutes or until the cheese begins to brown. 8. Garnish with your favorite toppings such as cilantro, green onions, corn, red chilies, jalapeños, or salsa.
