I’m not vegetarian/vegan but I like a lot of vegetarian/vegan food (or as I like to call it…food). This is a nice, refreshing salad that uses seasoned, shredded tofu in place of the traditional chicken. I got a head of pointy sweetheart green cabbage in this week’s farm share, otherwise I would have used savoy. I also didn’t have a hot pepper or Thai basil—mine died🙁—so I used a little sambal olek and regular basil instead. And I left off the peanuts because peanuts are disgusting (YMMV on that 😁). Makes a lot, enough for a big salad for dinner and one for lunch as well.

    Yummy! I am so crushed that one of my local delis used to make a version of this all the time and it has fallen out of their rotation (with chicken and fish sauce and peanuts)

    Almonds or cashews might be good subs for the peanuts.
