It never goes according to plan. It looks like you have a roof over your head and can make a mean apple crisp. That’s a lot more than many in this work have.

FOR THE TOPPING:
½ cup/71 grams all-purpose flour
3 tablespoons packed brown sugar
1 tablespoon granulated sugar
¼ teaspoon ground cinnamon, cardamom or nutmeg, or a combination
1 cup/116 grams chopped pecans or walnuts, or a combination
¼ cup/28 grams old-fashioned rolled oats
FOR THE APPLES:
1 to 4 tablespoons granulated sugar (i omitted this)
1 tablespoon all-purpose flour
½ teaspoon ground cinnamon, cardamom or nutmeg, or a combination
¼ teaspoon fine sea salt
3 pounds apples, preferably firm, with a mix of tart
1-2 tablespoons fresh lemon juice
i also threw in 6ish cardamom pods

Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
If you’d like, peel the apples. Cut into ½-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.

Isn’t it wonderful that, even though we may feel stagnant and frustrated in our lives, we can enjoy simple things like apple crisp? It’s a blessing to have the opportunity to think, “It’s 9:30 at night, and I have all the ingredients I need to make this delicious dessert,” and you can make it. Just like that. And maybe tonight you will sleep exceptionally well and wake up rested, and tomorrow you’ll have a good cup of coffee. Maybe you’ll have a nice conversation with a friend, maybe you’ll get your nails done, maybe you’ll go shopping, maybe you’ll hear a piece of music you like. Maybe you’ll have an opportunity to be kind and empathetic toward another person. Maybe an animal will cuddle up next to you.
Remember that nothing is permanent, you can refashion your life the way you want, no one else’s opinion matters, and you can reclaim your life and make it what you want and need. Your story is still being written. I often feel like I’m not holding the pen in my story, but I know, on a spiritual level, that I am. You are, too.

That sucks, and depression is the worst. That said, great self care! Sometimes you can’t not be depressed, but everything is a little better with a tasty dessert. It looks delicious, enjoy it, pick yourself up and dust yourself off tomorrow and keep on keeping on. Life can be different, just gotta decide to change things up and work at it.

My therapist has suggested that when I bake, I should use that time to put aside my thoughts and simply focus on what I’m doing in that moment. Did I preheat my oven? Is it at the right temp? Is my butter at room temp?
And just, get lost in my passion for baking.
This goes for all interests, but this was specifically his example.
Use baking as a respite to breathe.
One day at a time, okay? And if that feels too heavy, one hour at a time. Hell, one minute.

My mind has been in a similar place today. I’m 3.5 months into recovery from ACL surgery, still very limited in how much I can walk and stand. It makes most of the things I love doing nearly impossible, or painful, so I’ve really struggled to access joy lately. I’m tired of feeling stuck, so I called and made an appointment to get an rx for antidepressants. I hope you can find a moment of clarity and take action in just one way to move towards a life you’re more satisfied with.
