Hester’s Cafe is local to me and has this awesome salad, they use a Wine Vinaigrette but I made my own twist on it by using a lemon vinaigrette. You got to try this one!

📝RECIPE

🚪The Pantry
-Salt
-Pepper
-Dried Oregano
– EVOO (Food lube)
-Tri Color Quinoa
-Garbanzo Beans
– Chicken Broth (I used unsalted)

🍅The Garden or Fridge
– English Cucumber
– Lemons
-Cherry Tomatoes
– Kalamata Olives
-Avocado
– Feta Cheese
-Garlic
-Spring mix (or any greens)

🔪The Prep
– Measure out your desired amount of Quinoa
– Dice Cucumber
-Slice Tomatoes
– Slice olives (optional)
– Slice Lemons
– Finely chop Garlic
– Slice or chop Avocado

🍶The Vinaigrette
– To a small bowl add Salt, Pepper, Dried oregano
– Add Chopped Garlic
-Add 1 tbsp of Lemon juice
-Add 1 tbsp of EVOO
-Mix vigorously until well combined

🥗The Build
– To a Bowl add Spring Mix
– Add Cucumber
-Add Tomatoes
-Add Garbanzo Beans
-Add Kalamata Olives
-Add Avocado
– Top with Feta Cheese
– Garnish with Lemon Vinaigrette

What’s up, guys? Welcome to episode two of Basics, where this time we are making a Mediterranean salad with my own little twist on it where I added some quinoa that I cooked with some chicken broth. So, what consists of this is some spring mix, some English cucumber, black olives, tomatoes, garbanzo beans, feta cheese, and then I make this lemon vinegarette that consists of olive oil, lemon, garlic, salt, pepper, and oregano seasoning. And then you give that a quick mix. Right? So, I’ve been obsessed with this salad. They have it at Hers, which is a local cafe to me. And I have this at least once a week now that I learned how to make it. I have it once a week, actually. But before I was buying this like every week just because I was so hungry. And this is like the only thing that I can really have without feeling like I’m a total fat ass, you know? The other thing about this recipe is that you really want to figure out the vinegarette. You really want to play with the ratios of lemon juice and olive oil. Like salt and pepper. You just need a pinch of all that. and so is the oregano. But you really want to find that fine balance between too acidic and too oily. I hope you guys enjoy this. Catch you on the next one. Peace.
