Shrimp Saganaki, also known as Garídes Saganaíki, is a classic Greek dish that features shrimp cooked in a tomato and dill sauce with feta cheese.

Today I’m making one of my favorite shrimp dishes, shrimp saganaki. It’s a one pot sauté that includes shrimp and feta, dill, olives, and tomatoes. Let’s get started. Peel one pound of shrimp. I’m using our delicious spot shrimp. Next, thinly slice a medium onion and roughly chop one lb of ripe tomatoes. Crumble 4 oz of feta, preferably Greek. Sauté the onion until golden and add the tomatoes and cook crushing them with the wooden spoon as they soften. Stir in the shrimp and olives and cook until the shrimp are just cooked through, about 3 minutes. Season lightly with salt. Then stir in half of the feta and dill. Cook just until the cheese is softened, about 1 minute. Top with the remaining feta and dill and serve it with Greek pa. Enjoy.
